Chef Pradeep Kumar hails from New
Delhi, India
and is the co-owner and Executive Chef at Vedas Restaurant.He has over 18 years of experience cooking fine
food throughout the U.S.
and India.
Trained at the Food Craft
Institute of India (FCI), Kumar infuses every dish he creates with ingredients
culled from his extensive knowledge and passion for perfection. Chef Kumar
started his career as a Head sous Chef for the Claridges Hotel located in New
Delhi, India.
Once word of his tasty signature dishes got out, offers from many well-known
restaurants landed on Chef Kumar's plate. Although he had an affinity for his
hometown, Chef Kumar knew that greater challenges and opportunities awaited him
in the U.S.
In 2002, Chef Kumar began a career in the U.S.,
as head chef for the RoyalAlbertPalace in New
Jersey, NJ. He was given room to experiment and created
quite an eclectic menu. Chef Kumar also worked as a chef at Tamarind
Restaurant, considered the best Indian restaurant in New
York City and has previously worked under celebrity
chef Robert Irvine of Dinner Impossible.He has also worked in the Silicon Valley at many
high-tech corporate kitchens.
However, Chef Kumar never lost sight of his
passion for authentic Indian cuisine. He knew that to create the dishes he
wanted to share with the world, using only the freshest ingredients available,
he would have to establish a kitchen of his own.
